When Finnish beef steps into the spotlight it deserves

In March, Brasa delves into one of the most important ingredients in our kitchen: Finnish, beautifully marbled beef. The Marble Weeks are a two-week tribute to quality, craftsmanship and flavor – carried out together with our long-standing partner Herkkukonttori.

Why specifically Finnish beef?

Finnish beef is produced in a clean environment and responsibly, with respect for animal welfare. Calm growth and careful feeding give the meat its characteristic, balanced flavor and firm yet juicy texture. Good marbling completes the whole, bringing richness and multidimensionality – flavor that needs no explanation.

A wine that understands beef

As a companion to the Marble Menu, we recommend a classic from Bodegas Beronia:
Beronia Gran Reserva 2018 – an elegant and full-bodied Rioja with ripe dark fruit, spiciness and a long, silky finish. A natural and considered pairing for marbled beef. Available at Brasa until the end of May.

Marble Menu – three cuts, one ingredient

At the heart of the Marble Weeks is a special Marble Menu. As the main course, we serve three different cuts side by side: Denver, Flat iron and sirloin.
The same beef, three completely different expressions. The marbling is visible and tangible – in the texture, juiciness and depth of flavor. This is a rare opportunity to taste how different parts of the beef shape the whole, even though the starting point is the same.
